New York’s State of Mind: Cider and Cheese

Elevate your sliced apples and cheddar lunch snack and step into the splendors of the northeast. We’re talking about a night of cider and cheese pairings, all from this wonderful region. If you think wine and cheese is a match made in heaven, come taste the magic that happens when you combine these local favorites. As we taste through our domestic pairings, we’ll cover the basic history of cider production in the U.S. We’ll also get into the fundamentals of food and beverage pairings to give you the know-how to make your own pairings at home.

Learning Objectives:
Taste through several varieties of cheese and cider from the northeast U.S.
Explore the characteristics of local wines and cheeses and learn how they are made.
Learn about the history of cider and cheese production in the U.S.
Gain a solid foundation for pairing cheese and other foods with cider.

Join us for Astor Center’s fifth annual Applepalooza, an autumnal tasting extravaganza. Stop by to sample the ever-impressive and ever-sold-out ciders from Aaron Burr Cidery. Founded in 2011 by William J. Brennan, Jr. and Polly Giragosian, the cidery is on a plot of land which Cornell’s Agriculture school deemed horrible for apple trees. Thank goodness they ignored the advice of experts and started a cidery on the property anyway. We’ll be tasting whatever we’re able to get our hands on at the time of the tasting. Rowan has written the just published Apples of Uncommon Character, a visually lush and fact filled book as well as numerous terrific, informative (yet never pedantic) food books including A Geography of Oysters and American Terroir.

This dinner will showcase many of the best ciders, still and sparkling, and a complementary menu from Chef Peter Phillips highlighting cider friendly foods and celebrating some of the rarities Rowan has collected for us. Four courses plus a comparative tasting of Rowan’s favorite heirloom varieties with paired ciders $85. See the menu below.

Bring the Orchards back to Orchard Street!

Join us for our inaugural festival—free and open to the public— showcasing cider makers and apple growers from the Finger Lakes, Hudson Valley, Long Island and NYC (complete list below) who will be pouring samples along-side restaurants like Back Forty, Huertas, Mission Cantina, Northern Spy, The Queens Kickshaw, Wassail and more serving cider-friendly dishes like basque sausage, oysters and grilled cheese to highlight the pairing qualities of cider.

In addition, the festival will feature a community cider press with rare and unique cider apples provided by Steve Wood, legendary grower and cidermaker of Farnum Hill Ciders who has been growing cider apples for over 30 years. Jahil Maplestone of Descendant Cider, NYC’s first licensed urban cidery, will grind and press the apples into juice for a lucky few who have pre-purchased a gallon to take home and ferment. Brooklyn homebrew shop, Bitter & Esters will provide everything else budding cidermakers will need to make cider, including a copy of April White and Steve Wood’s Apples to Cider: How to Make Cider at Home.

Farnum Hill Ciders, Eve’s Cidery, Eden Ice Cider, Slyboro and Foggy Ridge will also be offering a $5 guided tasting from 12-4pm in Wassail’s Private Dining Room.

Heritage Radio Network will be onsite throughout the afternoon interviewing cider makers and festival attendees for future broadcast.

Alex Wilson from Wayside Cider left a filmmaking career last year to make ciders from wild and heirloom apples in the foothills of the Catskills. After a decade of working in the wine industry as a beverage director and portfolio manager at Skurnik Wines, Leif Sundström of Sundström Cider in Milan, NY moved to the Hudson Valley to apply his knowledge to cidermaking and will release four 2015 bottlings next spring. And you don’t even need to move out of the city to make cider! Descendant Cider is the NYC’s first licensed cidery pressing Hudson Valley apples for their ciders.

Bitter & Esters is proud to announce our Second Annual Community Apple Press Day for city cider makers, with cider-makers from Proper Cider.

On Tuesday, November 10th and Wednesday, November 11th, from 5pm to 8pm, our friends Joy and Jeremy from Proper Cider will be at Bitter & Esters helping grind and press apples into delicious cider. This will be Jeremy & Joy’s 10th year making cider in Brooklyn and they will be available to answer questions about cider making, fermentation and show you how they do it.

Plus, if you would like to craft your own juice blend to ferment into cider, you can run your apples through Proper Cider’s equipment. This is an awesome opportunity to make your cider the proper way.

This is a free event and Bitter & Esters will have cider fermentation equipment for sale so when you grind and press your apples you can get your fresh cider home and start fermenting!

The minimum amount you can have ground and pressed is one bushel, which is around 42 pounds of apples. This will yield between three and four gallons of juice. Leif Sundström started Sundström Cider in the Hudson Valley after 10 years of working in the wine industry as a beverage director, harvest assistant and cellar hand and Portfolio Manager at Skurnik Wines. After leaving Skurnik, Leif spent a harvest season at Weingut Leitz in Rüdesheim, Germany before moving to the Hudson Valley to explore the potential of cider. Leif’s ciders are made with a combination of select wild harvest apples, heirlooms, cider apple varieties, and several species of crab apples in an effort to make vinous, age-able ciders that speak of place.

Special Cider Cocktail: “Heavenly Jeweled Spear” at Roberta’s

Shiso and cider are the magic of Roberta’s cider cocktail. “Shiso is bright, herbaceous and a seasonally appropriate fall-leaf crimson that, when muddled with Peychaud’s and mixed with Wölffer’s rosé cider, looks pretty and tastes delicious,” says Head Bartender Benjamin Harrison. Named after a Japanese myth of the spear that brought forth the world, it’ll rock yours!

Heavenly Jeweled Spear
2 dashes Peychaud’s bitters
5-6 leaves fresh red shiso (grown onsite at Roberta’s!)
Muddle shiso and bitters, then add:
¾ oz Cocchi Americano
¼ oz simple syrup
Add rocks, stir and while stirring slowly add:
2 oz Wölffer No. 139 Dry Rosé Cider
Double strain over fresh rocks, garnish with a sprig of bronze fennel

Our second annual festival showcases cider makers and apple growers from the Finger Lakes, Hudson Valley, Western New York and NYC who will be pouring samples and selling their wares alongside pay-as-you-go cider-friendly dishes from area restaurants and shops.

There is no cost to attend the event. If you wish to sample ciders, you must pick up a 21+ wristband during the event at stations at Orchard and Houston Street, Orchard and Delancey Street, and in front of Wassail (162 Orchard Street). While you are there, support the New York Cider Association by purchasing raffle tickets for a chance to win a “Cider Flight” of gift certificates for dinner for two at some of our favorite cider-savvy restaurants.

Wassail will be hosting the New York Cider Association’s Fermentation Station, a 21+, pay-as-you-go experience outside their restaurant serving select pours to demonstrate qualities such as tannin, acidity, sugar, and aroma and how they express themselves in a finished, fermented product.

In addition to drinks and eats, the festival will feature a community cider press with rare and unique cider apples provided by Steve Wood, legendary grower and cidermaker of Farnum Hill Ciders who has been growing cider apples for over 30 years. Jahil Maplestone of Descendant Cider, NYC’s first licensed urban cidery, will grind and press the apples into juice for a lucky few who have pre-purchased a gallon to take home and ferment (details to follow!)

This fall, thanks to funding from Taste NY and Empire State Development, four Greenmarkets will welcome breweries, cideries and distilleries selling products made with local ingredients. Every week New Yorkers will be able to meet a different craft beverage producer, sample their products, and purchase a bottle or two to bring home. Neighborhood restaurants will offer bites and the Greenmarket Grainstand will be selling regionally produced whole grains and flours on these days.

Home fermenters, cider-making enthusiasts, and DIY nerds rejoice!
The Lower East Cider Festival offers an extremely rare opportunity to make cider at home from the finest cider apples in the country. The farmers from Poverty Lane Orchards, home to Farnum Hill Cider, will be driving a truck of their extraordinary cider apples down from New Hampshire on Sunday, October 23rd, and our friends from Descendant Cider will grind and press these apples into fresh juice during the festival. There are only 40 shares of this juice available, so reserve yours now!
Your $25 purchase provides you juice in a glass gallon container with a cap; additional equipment and yeast will be available for purchase from Bitter & Esters during the event. Several cider makers who work with Poverty Lane’s fruit will be available for consultation and advice throughout the day.

Autumn Stoscheck of Eve’s Cidery will share her intimate understanding of the personality of the Golden Russet, and we’ll get to the core (pun intended) of what makes the Finger Lakes one of the country’s leading cider regions.

In addition to cider, Darlene Hayes and Dan Pucci have assembled a collection of fresh Golden Russet apples gathered from across New York state and select other parts of the country that we will taste and see what we can learn about the diversity in American terroir and how it might impact the ciders of different regions. Escape the city for the weekend and join Hardscrabble Cider as we celebrate Cider Week with our Fall Festival! The event will be held at Harvest Moon Farm & Orchard: the site of our cider operation, where we grow our apples and make our cider – which also happens to be the one of the closest orchards to New York City. Visit our tasting room on-site to try our hard cider or some New York craft beer. Explore the orchard and partake in hayrides, pumpkin picking, live music, cider donuts, or one of the many food vendors. The festival will be going all day Saturday and Sunday, from 9am to 6pm. We’re celebrating Cider Week at our factory with local NY cider maker Descendant Cider Co. This is perhaps the only event with the trifecta of tastiness: cider, chocolate, and cheese. Join us for a spirited evening of crisp ciders, craft chocolate, cheese and other nibbles. Come learn about Descendant Cider, the Big Apple’s little urban cidery and taste five ciders with five complimentary chocolates from our current collection. While chocolate is often paired with wine, we find the distinct, crisp ciders from Descendant play incredibly well with our cacao-forward, unroasted chocolate.

Both Descendant and Raaka make everything from scratch at our respective locations: from apples to bottles, from beans to bars. Murray’s Cheese Shop will be generously providing more fermented goods as well.

So You Want To Start Your Own Cidery

For 15 years Seth Jones has been exploring the back roads, trails, and forests of East Hollow along the western foot of the Taconic Ridge. There he has found and harvested “orphan apples” and turned them in to unique, complex and original ciders. Twelve years ago he began planting hundreds of trees grafted from these wildlings and from more traditional cider varieties.

Splitting time between Manhattan and his upstate home, he spends his weekends orcharding, foraging and searching for old apples. With East Hollow Cider officially coming online in summer of 2016, he’s transforming his life so he can do it full time. In his words, “It’s quite insane.”

Join Seth for a tasting as he talks about how he became obsessed with apples and cider, and about his trials and tribulations in obtaining a cidery license.

Lindsey Zahn, an attorney who focuses her practice on alcohol beverage and food regulation, will also be on hand with helpful hints.
